Tradition has it that the Zita, characterized by significant thickness and roughness, is broken by hand into irregular pieces before being placed in a pot for cooking.

The Zita Tagliata has already been reduced in length for greater ease of use in the kitchen.

This format can be used in the preparation of baked recipes or dry pastas seasoned with thick, colorful sauces, meat or fish, vegetables or greens, or flavorful cheeses such as pecorino, provolone, or caciocavallo.
