Grapes: Malvasia Bianca.
Production area: Selected vineyards in the area east of Ruvo di Puglia, on the limestone hills of Alta Murgia.
Breeding system: Apulian pergola.
Harvest period: Mid-September.
Winemaking: The grapes are immediately taken to the cellar and subjected to pyjadiraspatura, then cooled to 10 °C; then a short maceration takes place in a press for 4/6 hours to extract the aromas of the skins. The flower must is collected for fermentation in steel at 15 °C. The wine ages for 40 days on the yeasts before being put in the bottle where it remains aged for a further 2 months.
Organoleptic notes: Intense straw yellow, the aromaticity of nectarine peach and tropical fruit intertwines with a fresh mown lawn of chamomile flowers and yellow daisies. The balance of taste outlines the decisive character of this wine which closes pleasant between softness and long freshness.
Food pairings: Seafood troccoli, legume soup, and grilled fish.
