Protected Designation of Origin.
Primitivo is an ancient grape variety grown in Puglia whose grapes ripen very early compared to other varieties. A very interesting peculiarity of Primitivo is that just 20 days after the harvest, this grape variety is able to produce a decent second production. Traditionally, the fruits of this “second harvest” are used to give freshness to this powerful wine by improving the acidity of the musts obtained from the first harvest.
GRAPE VARIETY: Primitivo.
PRODUCTION AREA: rural area of the villages of Manduria and Sava, in the province of Taranto.
BREEDING SYSTEM: traditional 40-year-old Apulian sapling, short-pruned, with two-bud spurs.
WINEMAKING: After harvesting, the grapes are destemmed and the crushed fruit ferments in steel at a controlled temperature of 25 °C for 8-10 days. Maceration on the skins lasts 15-18 days to optimize the gentle extraction of tannins and anthocyanins.
RIPENING: 3 months in American oak barriques and 6 months in steel.
GASTRONOMIC PAIRINGS: The large body of the Primitivo di Manduria di Passo del Cardinale is able to exalt fine meats of rigorous structure. Beef cuts and steaks in irons are the background of a panoramic photograph. A touch of Puglia with orecchiette in the sauce of chops can be a gastronomic trip with which you can surprise your guests.
