The best organic vineyards of Nero di Troia around Castel del Monte hills in Puglia have been used for this wine. Winemaking is carried out traditionally at controlled temperature in limited capacity vessels (stainless-steel). Refining in concrete (8 months) and in barrels (10% of the wine), and afterwards in bottle. Concrete tanks stabilise the temperature of the wine without fluctuation and are ideal for storing and aging wines. The wine breathes and evolves, gaining in richness, volume and purity of fruits flavours.
The Nero di Troia grapes for this dry, red wine spent their days ripening on the sunny Castel del Monte hills. Nice fruit jam on a set of spices and violet which complete the range at the nose. Ripe fruit flavour and mellow tannins make this wine easy to drink and perfect to share. .
