Protected Geographical Indication.
A wine with a strong personality, obtained from grapes of great character without compromise. The very intense red color and the enveloping scents of blackberry, cherry and raspberry constitute an unforgettable organoleptic experience. Those who try it are invariably won over.
Grapes: Pure Trojan Black.
Production area: Murgian hills west of Ruvo di Puglia.
Breeding system: High espalier with density of 3,000 stumps per
hectare.
Harvest period: Between mid and late October.
Winemaking: The grapes, freshly harvested, are brought to the cellar
for the selection of bunches and subsequent pyjadiraspatura. He comes
then a preferential maceration was carried out at temperature
checked for 24/48 hours, then the must is left to ferment with
selected yeasts in steel for 7/10 days. Next comes
pressed softly. Still in steel, the wine ferments
malolactic and then moved on to a brief refinement in barrique. After
bottling spends a few months in glass before being put in
trade.
Organoleptic notes: Seductive and intriguing ruby red color. Elegant is her floral bouquet of freshly withered mammola purple. Blackberries, blueberries and black cherry intertwine with typical notes of cinchona and graffiti of the grape variety while, in the background, spices, undergrowth appear and dark tobacco. Warm taste and vigorous tannic texture. Closes persistent on fruity and toasted notes.
Food pairings: Legumes with knife-point sausage, Baked leg of lamb, roasted pig, stuffed chicken, caciocavallo cheese
seasoned.
