Typical geographical indication.

Red earth and limestone rock are the cradle of Negroamaro plants that produce the raw material of this great red Salento. Wine with a rich and complex aroma and a large body. It pairs with robust first courses, red meats and aged cheeses.

GRAPE VARIETY:  Negroamaro.

WINEMAKING AND REFINEMENT: Thermo-controlled maceration and alcoholic fermentation with selected yeasts for approximately 10 days. Aged in French oak barriques for 4-6 months.

ORGANOLEPTIC CHARACTERISTICS: Very rich and deep purple red; Rich and complex aroma, with notes of spices, berries and cherry jams. On the palate it is full-bodied, soft and harmonious, rich in noble tannins, with a pleasantly persistent finish.

FOOD PAIRINTIGS: Sturdy first courses like tagliatelle with ragù, red meat main courses like stews, stracotti, roasts, and braised meats; excellent with aged hard cheeses.
