The yellow tomato "Pacchetelle" are obtained from yellow, ripe and whole cherry tomatoes cut into two parts (pacchetelle), manually placed inside glass jars to preserve their wholeness and consistency and finally stabilized through a thermal pasteurization process. This preparation and preservation method allows the aroma, colour, sweetness and freshness of the "pacchetelle" to be maintained, making it a product with a very sweet flavor which is especially suitable for the preparation of fish-based first courses.
The yellow cherry tomatoes used are grown in areas typically suited to cherry tomato cultivation, characterized by loose soil and lack of water, which favor the concentration of vitamins, antioxidants, sugars and aromatic substances that make it a unique product to be enjoyed.
