Romanesco cauliflower, more precisely called Romanesco broccoli, is a vegetable of the brassicas family, similar to cauliflower but recognizable by its particular pyramid shape composed of inflorescences (florets) arranged in a perfect spiral, creating a fractal appearance. It is native to Lazio and stands out for its sweet and delicate flavour, low calorie content and abundance of vitamins, mineral salts and fibre.
