Purple asparagus (or violet) is a rare and prized variety, best known for Albenga Violet Asparagus, a unique Ligurian Slow Food Presidium. Unlike green or white varieties, it owes its color to a genetic factor and not to the cultivation technique; in fact, it has 40 chromosomes, twice as many as its peers, which prevents it from crossing with other types. 
It has a delicate flavor, less aggressive to the smell, with notes that can range from sweet to slightly fruity.
