The precious qualities of the native Bombino Nero grape variety are enhanced by this rosé wine with its soothing coral color and characteristic raspberry aroma. One of the most authentic expressions of our territory.

Grapes: Puro Bombino Nero.
Production area: Murgian hills west of Ruvo di Puglia.
Breeding system: High espalier with density of 3,000 stumps per
hectare.

Winemaking: The grapes are immediately taken to the cellar and subjected to pyjadiraspatura, then cooled to 10°, then subjected to a short maceration in a press for 4/6 hours in order to extract the aromas of the skins. The flower must is collected for fermentation in 15° steel. The wine ages for 60 days on the lees before being put into the bottle, where it remains in aging for a further 2 months.

Organoleptic notes: Crystalline, shiny cerasol. Wild strawberries and pink geraniums define its aromatic profile while, to the taste, the soft fruity gelée envelops the freshness measured by alcohol. Its savoury and mineral finish returns a wine of harmonious structure.

Food pairings: Acquasale, a pancotto with vegetables, mussel gouzzetto, pasta and sun-dried tomatoes, and Adriatic fish soup.
