It is seasoned internally during the rolling process with herbs such as garlic, sage, bay leaves, rosemary, and wild fennel.
Cooking is done by steaming and finished with an external braise: the intense aroma and strong roast flavor make it a popular product, suitable for consumption in any way and on any occasion.
