The Guanciale Sorrentino has characteristics that make it unique in its kind.
First of all the processing:
• The meat used comes from internal slaughter. The anatomical part of the Guanciale is worked fresh, without temperature alterations;
• The trimming and cleaning of the fresh product are then carried out by master butchers. At the end it is massaged and mixed with natural spices and remains at rest for a week, to absorb the tastes and aromas that will give it that unmistakable flavour;
• The next step is to sprinkle the product with freshly crushed black pepper (or chili pepper as appropriate). The application is strictly handmade to ensure uniformity on the surface of the product.
Curing is another of the strengths:
• At the end of the flavouring, the Guanciale is taken to dry where it remains for a few days. Once dry, it is then moved to the maturing stage where it remains for at least 45 days;
• The slow curing and the process highlighted above allow for an excellent result and an incredible product. Guanciale with Sorrentino pepper is excellent both for cooking (appetizers) and as a sliced dish (bruschetta), because it is in line with the flavors of the past and in the perfect Norcine tradition of the Sorrentino family.
