Negrini salumi interi, salame dolce zia ferrarese , circa 1.6kg.
The pork is left to macerate in white wine, seasoned with salt, pepper and fresh garlic giving a good flavour. It is then filled into a medium-thin gut called "Zia" and left mature in cool, humid cellars for five to six months.
