Red chard (or red rib) is a variety of rib chard (Beta vulgaris) known for its bright crimson stems and dark green leaves with red veins. Belonging to the beet family, it shares their earthy flavor but does not produce an edible root.
The leaves taste similar to spinach but more herbaceous; the stems are succulent with a mineral, earthy note, sometimes slightly bitter when eaten raw.
