Thema artichoke is a prized early variety, grown mainly in Sicily (Licata area) and Sardinia, characterised by a tapered shape, intense violet colour and tender bracts, sometimes with a short thorn. It offers a delicate, slightly bitter flavour, ideal for both raw (pinzimony) and cooked consumption.
