"Baby loose" artichokes are fully mature artichokes that grow lower on the plant stalk, remaining small because they are shaded by the larger globe artichokes above. Unlike their larger counterparts, they have not yet developed a fuzzy, inedible "choke" in the center, allowing the entire vegetable to be eaten after basic trimming.
