Smoked Scamorza.

Scamorza is the only stretched curd cheese salted, dried and ripened for c.72 hours. With its variety of formats (from spherical shape and a small bump to long log and pearls), the product’s name derives from this typical shape that looks like a “severed head” (“capa mozza”). Scamorza can be tasted in its classic format or “smoked” to add a decisive stronger flavour.

Ingredients:

Milk, rennet, cream and salt.
