Topinambur, also known as Jerusalem artichoke, is an edible tuber of the perennial herbaceous plant Helianthus tuberosus, native to North America. Its name comes from the fact that the English Puritans named it in honor of the New Jerusalem they intended to found in the New World. Topinambur has a taste reminiscent of artichoke and potato, and is appreciated for its beneficial properties, including high content of inulin, a fiber that promotes digestion and regulates blood sugar.
