Casareccia is native to Sicily, but is also characteristic of other regions of the south.
From the shape of a small smooth parchment, rolled up on itself and curved towards the tip, the name evokes the ancient homemade origin, an interpretation of "pasta busiata" Arabic derivation obtained with the thin cane of a plant with which once wrapped the pieces of dough.
Casareccia is suitable for the classic ragout, although the smooth and gently porous surface offers an ideal support for any type of sauce, from traditional to simple ones.
