Verdura fresca di stagione, le cime di rapa.
Cime di rapa are an autumn-winter vegetable belonging to the cruciferous family (Brassica rapa campestris), which includes cabbage and broccoli. These are the leaves, stems and, above all, the still closed floral tops (also called friarielli or broccoli) of the plant. They have a characteristic, bitter and slightly spicy flavour, and are highly appreciated in Italian cuisine for their nutritional value: they are rich in fibre, vitamins, minerals and antioxidants, despite having few calories.
