Broccolo fiolaro is a traditional variety of broccoli typical of the Vicenza area, in particular of Creazzo, characterized by the formation of numerous lateral shoots ("fioi", which means "children" in Venetian dialect) along the stem, instead of a single central head. This vegetable, very resistant to the cold, is harvested from November to February and its edible parts (germs and leaves) are excellent sautéed in a pan, in risottos, pastas, pizzas, or used to prepare pesto.
