Cotechino is a type of sausage consumed cooked and widespread in all regions of northern Italy. It owes its name to the rind, the pork rind.
Tradition has it that cotechino is eaten in Italian households on New Year's Eve because it is thought to bring good luck, and eating the side lentils is said to bring a lot of money.
Cotechino is also excellent served with mashed potatoes, or Jerusalem artichokes, or even chickpeas. If you like spinach, boil them, sauté them in a drizzle of oil with a clove of garlic and then serve them with cotechino. Otherwise, another vegetable that goes well with this cured meat is green beans.
Italian Tradition
The name comes from cotica (pork rind), because that is primarily what the filling is made of. Indeed, cotechino was developed to use the pork rinds and the less valuable parts of the pig. Since pigs were generally slaughtered in December, this sausage became a symbol of the holidays, accompanied by lentils, mostarda or mashed potatoes. To be eaten after long cooking, which gives the meat a melted consistency. The classic cotechino in natural casings is typical of Modena, Mantua and Cremona, and is also found in regions like Piedmont, Veneto and Trentino. This is the traditional dish to serve on New Year’s Eve, along with lentils, which traditionally bring good luck and wealth.
How To Keep It Fresh
Fresh cotechino keeps for three weeks to three months if left in a cool, dry place, hung up and not in contact with other sausages. If packaged, it can be kept up to six months.
INGREDIENTS: Pork, rind, pig fat, salt, natural flavors, antioxidant: sodium ascorbate, preservative: sodium nitrite.
STORAGE: The product has been subjected to a sterilising cooking process that ensures long-term storage even without refrigeration. As a precaution, the product should be kept away from heat sources.
PREPARATION METHOD: Remove the bag from the carton and immerse it in a pot full of cold water, bring to a boil and let it boil for about 20 minutes. When cooked remove the bag from the water and cut a corner to facilitate the exit of natural cooking broth. Remove the product, peel it, slice it and serve it hot.
