Carnaroli rice
In many respects it represents excellence among all Italian rice varieties. Its high starch content helps to make the grain consistent after cooking while always keeping it al dente.
It is, by unanimous judgment, considered the best Italian rice.
it is ideal, therefore, for the preparation of fine dishes and regional specialties. Its large grain and its ability to blend and enhance the most varied flavours and foods ensure the perfect success of risottos, timbales and salads. Its proverbial cooking properties make its use extremely versatile and make it an excellent rice for large occasions. Carnaroli rice cultivation began in 1945 by crossing the Vialone and Leoncino varieties. The province of Pavia has specialized in the cultivation of this species and even today more than 60% of Carnaroli is produced here.
