The Linguine are the format of long pasta Liguria par excellence: shaped small flat and narrow tagliatelle were born to accompany the traditional pesto.
Thanks to the compressed section and the slightly convex shape, they are perfect for capturing seasonings and returning all their variety of flavors.
They are excellent simply with butter and sage or combined with sauces based on fresh tomato, with vegetables and aromatic herbs or consume spicy quick, prepared with extra virgin oil, garlic, chili, anchovies and capers.
They are also ideal for fish sauces with molluscs and seafood and with the "white" sauces prepared with cream of milk, mascarpone, soft cheeses and fusibili and with the addition of spices such as saffron, horseradish, curry and ginger.
