Superior product using only top quality Italian pork adhering to the strict PDO (Protected Designation of Origin) process. This includes the dry-salting of well trimmed pork with a mixture of salt and spices for 15 days after which it is then matured. It has a firm texture. When cut, the slices are compact and the colour is red with some pinkish white parts. Gluten free.
