The Tagliatelle, are widespread throughout Italy and are part of the family of long flat section pasta.
They originate from the regions of northern Italy, in particular the gastronomic and culinary tradition of Emilia.
The Emilian origin of the Tagliatelle is testified by their presence within the popular sayings and idioms rooted among the people of Emilia. We have an example of the deep Emilian roots of Tagliatelle in "La scienza in cucina e l'arte di mangiar bene" by Pellegrino Artusi : "Short accounts and long noodles, the Bologneses say, and they say well, because long accounts scare the poor husbands and short noodles attest to the inexperience of those who made them and, served in this way, they seem a leftover from the kitchen."
Their natural versatility makes them tasty with all kinds of seasoning: they are excellent as dry pasta or pasta flans, perfect seasonings based on fish and shellfish, butter, white sauces based on soft cheeses and cream milk with the addition of saffron curry.
