Tagliatelline, originating in Liguria, are widespread throughout Italy and are part of the family of long flat section pasta.
To go back to the origins of the Tagliatelline we have to go back in time and get out of the national borders: the Tagliatelline were known since 700 A.D. in Japan, where they were imported from China along with many other cultural and religious elements. In Japan they were called Udon, noodles of soft wheat, and they had to meet a huge success, especially in the province of Osaka and generally in the southern part of the country.
Tagliatelline have dimensions that make them suitable to be enjoyed both as dry pasta and in broth. In the first case, the condiments recommended are those that refer to the Ligurian tradition, so pesto is the prince condiment followed a short distance from the sauces made of fish and shellfish. They are also excellent in vegetable and meat soups or, with a look at the oriental tradition, also in soups based on broths of algae and mushrooms.
