The Martimucci trofie are the fresh pasta shape that pays homage to the Ligurian pasta making tradition. From very ancient origins, the first appearance of trofie dates back to the Crusades, when Ligurian women rolled the pasta scraps around a sort of wooden knitting iron and then crushed them lightly with their hands.
