Penne Rigate are among the most famous pasta shapes and therefore also more versatile in the kitchen. The term Penne refers, in the Italian language, to the goose pen formerly used for writing and which was cut on the bias to obtain a tip from the thin line. The format, obtained from a tube of paste, smooth or striped, of variable length, has the characteristic diagonal cut typical of the writing pen. Penne are one of the few pasta shapes with a certain date of birth: in 1865, in fact, a pasta maker from San Martino d'Albaro (Genoa), Giovanni Battista Capurro, asked and obtained a patent for a diagonal cutting machine. The patent was important because it allowed to cut the fresh pasta in the shape of a pen without crushing it, in a format varying between 3 and 5 cm (half pens or pens). We read in the document kept at the Central Archives of the State of Rome: "Until today you could not get the diagonal cut that with the scissors by hand, method that in addition to being too slow and expensive presented the drawback of producing an irregular cut and crush the pastes". Penne Rigate are perfect for the preparation of baked pasta or for dry pasta topped with pork or beef sauces. But they are also excellent with vegetable based condiments and more generally, because of their versatility, for all the recipes of the Mediterranean tradition, such as the classic sauce with tomato, basil, extra virgin olive oil and a sprinkling of Parmesan.
